Barley&Beef Soup

This comforting soup reminds me of the cold winter days when my sister and I went out all day skating in the park next door and when I came back, my nose and my cheeks all red, my mother had concocted a good soup with beef and barley that filled our stomachs and warmed our frozen cheeks.

Cooking time: 1 h 35 minutes
Quantity: 12 servings

  • 1 lb of boiled beef
  • 8 cups beef broth
  • 1 large onion, minced
  • 2/3 cup pearl barley
  • 3 diced carrots
  • 2 diced potatoes
  • 2 stalks of celery
  • 1 cup diced turnip
  • 1 tbsp. rosemary
  • 1 tsp salt
  • 1 tsp pepper


  1. Bring beef broth and onion to a boil over high heat
  2. Lower the heat, simmer for 1 hour
  3. Add carrots and other vegetables + rosemary and barley.
  4. Boil 30 minutes
